Veteran pitmaster Tim McLaughlin is the owner of Crossbuck BBQ in Farmers Branch, Texas, a suburb just north of Dallas. He’s been in the barbecue game for 16 years, but before dedicating his life to brisket and ribs, McLaughlin worked in fine-dining kitchens and was a culinary school instructor. Now, he’s channeling his background into a new supper club that kicks off January 30.
