Brisket Pizza

Overview
For Crossbuck BBQ's brisket pizza recipe (which may more accurately be described as a flatbread), Tim started by making the dough, rolling it thin and then drizzling it with a bit of truffle and olive oil. His goal was to create a light, airy crust and not overpower the pizza with a heavy BBQ sauce. As usual, he wanted the brisket to be the star of this show while complementing it with fresh basil, spinach, cremini mushrooms and a bit of smoked cheddar cheese.

Ingredients
Dough Recipe
- 1-¼ cups Warm Water
- 2 tablespoons Sugar
- 1-½ teaspoons Instant Yeast
- 2 tablespoons Vegetable Oil
- 3 cups All-purpose Flour
- 1 teaspoon Salt
Pizza Sauce & Toppings
- ¼ lb (or more) Crossbuck Chopped Brisket
- 1 oz. Truffle Oil
- ½ oz. Olive Oil
- 8 leaves fresh Basil, chiffonade
- 1 oz. Smoked Cheddar Cheese
- 1/2 oz. Cremini Mushrooms, sliced
- 1/2 oz Spinach

Instructions
Make the Dough
- In a mixer add the first three ingredients. Give it a couple twirls with the hook attachment and let it sit until frothy. Add in the vegetable oil.
- In a separate bowl combine the flour and salt. Add the flour mixture to the yeast mixture, 1/3 cup at a time, mixing well between additions with the hook attachment. Add the flour until the dough can be pulled away from the sides of the bowl and starts to form a ball. The dough will still be pretty sticky. You may need to add in a little bit more or less flour.
- Grease a large bowl, place the dough in the bowl and oil the top of the dough also. Cover the bowl with a towel and a let the dough rise at room temperature until twice the size, at least 1 hour.
- Put the dough on a floured work surface and form into one large ball. Cut that ball into 3 equal portions. Each portion is enough for one normal sized thin crust pizza.
Prepare the Dough
- Roll out the pizza dough to the desired size - about 10" to 11". You could also try your hand at "tossing the dough" which has the added benefit of creating a crust that is crunchier on the outside and lighter and airier in the middle...but that get's a little advanced. So, let's just stick with rolling out the dough.
- After properly rolled...prick the dough with a fork to create exits for the steam. You will fork the dough every inch on every spot but your desired crust.
- Evenly drizzle ½ of the truffle oil and the olive oil over the crust.

Add the Sauce and Toppings:
Evenly spread the remaining ingredients (aside from the remaining portion of the truffle oil) on the pizza dough.

Bake the Pizza
Place the pizza on a flour dusted pan and bake at 425° for 7 - 9 minutes. This should yield a pizza with a beautiful golden brown appearance.

Serving
Once the pizza has cooked to this golden brown, remove it from the oven and drizzle it with the remaining truffle oil. Slice it and enjoy.
